Potato Soup

 

Just wait til you taste this one!

 

3 pounds of potatoes, diced

1 pound lean bacon

3 celery sticks, diced

2 onions, diced

1 can evaporated milk

2 T. butter

˝ cup Holy Habanero salsa

Flour to thicken

 

Fry 1 pound of bacon -- drain and break into bits. 

 

Boil the diced potatoes until done, but still firm; drain.  Pour in the can of evaporated milk, and add 6 cans of water.  Add the butter and the bacon bits.  Turn this mix up on higher than medium to heat so you don't scorch it.

 

When the potato soup is steaming and almost ready to serve, add Habanero salsa, onions, and celery.  Don't let the onions and celery cook too long; you want these to be crisp.  Add salt and pepper to taste and add 2-4 tablespoons of flour (or cornstarch) to thicken.

 

Note:  If the Habanero is too much heat, you can substitute Holy Molé! Medium Salsa.
